Carp Dumplings Recipe for Common Carp

Title: Carp Dumplings

Prep Time: 15-20 minutes
Cook Time: 45-60 minutes
Ingredients: Bouillon:
1/4 cup butter
1 onion
2 stalks of celery
1 carrot
2 pints hot water
2 tbsp salt
1/4 teaspoon white pepper

fish mixture:
1 pound carp fillet
1 onion
2 small pieces of celery
4 slices white bread
1 teaspoon dried parsley
1 tsp salt
1tsp white pepper
3 eggs
Directions: First in a 2 quart pot make the bouillon by melting 1/4 butter and browning 1 onion, 2 stalks celery, and 1 carrot all chopped. Add 2 pints of hot water, tbsp salt, 1/4 tsp white pepper. Boil 30-40 minutes

Prepare the fish mixture by putting 1 pound carp fillet, 1 onion, and 2 small pieces of celery through a grinder/processor. Mix together 4 slices white bread, trimmed and rubbed to fine crumbs, 1 tsp dried parsley, 1 tsp salt, 1 tsp white pepper. Add 3 well beaten eggs and mix well.

Drop by spoonfuls into the boiling bouillon and cook until done, about 5 minutes. Server with chile sauce.
Other Notes: While I support catch and release I am not opposed to eating fish. I urge people to use what they choose to kill though, please do not simply kill a fish just to kill it.
