grilled/smoked pollack Recipe for Pollock

Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 30-35 minutes
Ingredients: 2 fillets per person, (just average size fillets)
butter, montreal steak seasoning, Yes i said steak seasoning.
Directions: take a flat cookie pan and put parchment paper on it, butter the parchment paper, this is mainly so the fish doesn't stick and also so the fish doesn't fall apart on the grill since pollack is a delicate fish. put the fillets on the paper and lightly butter the fillets and sprinkle genorously with the steak seasoning. put on the smoker for about 10-15 minutes at about 150 degrees just to give the fish some smoke flavor. I use hickory and apple wood for mine. once you smoke it some, take the fish off and turn up the heat to about 375-400 and put fish back on and cook until flaky or about 15-20 minutes. that is it.
Other Notes: eat and enjoy.
goes good with some cole slaw on the side, also maybe some rice or whatever you may like.
